Amazing chicharrón with green salsa



  • 290 gr of San Marcos Rajas
  • 500 gr of pork rind
  • 500 gr of tomatillo
  • ½ onion
  • 2 garlic cloves
  • 10 sprigs of coriander
  • 1-2 seasoning cubes
  • 1 pinch of salt
  • ½ liter of water
  • 1 pinch of sugar


01. Wash and disinfect all your vegetables. Chop the tomatillos to make the sauce.

02. Roast the tomatillos with oil and put them in the blender. Roast the onion and the garlic cloves, then add the rajas and blend everything together with the coriander, seasoning, salt, sugar and a glass of water.

03. Fry the pork rind with oil and add that to the blender too.

04. Add some water and let it boil for 5 min.
