Delhi beans

Ingredients:

  • 1 Tbsp Coconut or Vegetable Oil
  • 2 Chopped Garlic Cloves
  • 2.5 cm Fresh Ginger, finely chopped
  • 2 or 3 Chopped San Marcos Jalapeños
  • 1 tsp Mustard seeds
  • 1 tsp Cumin Seeds
  • 1 Onion, finely chopped
  • ½ tsp Ground Tumeric
  • 1 can San Marcos Refried Bayos Beans (430g)
  • 1 can Chopped Red Tomatoes (400g)
  • 1 can Asian Coconut Milk (unsweetened 400ml)
  • Sea Salt and Freshly Ground Pepper
  • 1 cup Fresh Coriander, chopped
  • 1 cup Natural Yogurt (optional)

Instructions:

01.  Fry the coconut oil with garlic, ginger and jalapeños. Add some mustard seeds and cumin seeds and mix until they aromatize. Add the onion and fry until smooth. Add the turmeric and beans.

02. Add your tomatoes and coconut milk, let it boil and then reduce the heat. Let everything cook while mixing until the sauce thickens. Season with salt and pepper.

03. Serve with some coriander, yogurt and white rice.

San Marcos tip: Ginger is great for blood circulation and has been used for many generations as an anti-inflammatory agent.

Mogo mogo

Mogo mogo

Ingredients:

  • 2-3 Plantains
  • 4 Tbsp Lard or Vegetable Oil
  • 1 can of San Marcos Refried Black Beans (580g)
  • 50g Crumbled Fresh Cheese

Instructions:

01. Preheat the oven to 180 ºC. Sting the plantains with a fork without peeling them and bake until soft and black. Let them cool and peel them. Place them in a bowl and mash until you make a smooth paste.

02. Put the lard or oil in a pan and fry the beans until thickened.

03. Put everything in a glass container. First one layer of plantain’s mashed and the one of beans. Bake until heated through and serve garnishing with cheese.

San Marcos Tip. Make the platain’s smashed one day in advance for it to cool down. When the plantains are hot it is almost impossible to achieve a smooth mash.

Shredded beef with jalapeño tostadas

Ingredients:

  • 1 can of San Marcos Jalapeño Slices (215g)
  • 1 can of San Marcos Refried Black Beans
  • Tostadas
  • 500g Cooked Shredded Beef
  • ½ cup cream
  • ½ cup Sliced Onion
  • 1 Finely Chopped Garlic Clove
  • 6 Lettuce Leaves (finely chopped)
  • Salt and Pepper

Instructions:

01. Fry the meat with the onion, garlic and the jalapeños’ vinegar.

02. Fry the beans and add 2 Tbsp of jalapeños.

03. Put a layer of beans in your tostada, as well as the meat and lettuce. Add some cream and some jalapeños.

San Marcos TIP:

You can try it with avocado too.

San Marcos machaca eggs

Ingredients:

  • 8 Eggs
  • 2 Tbsp Milk
  • Salt and Pepper
  • 3 Tbsp Vegetable Oil
  • 150g Shredded Machaca
  • 1 can of San Marcos Homemade Mexican Sauce (500g)
  • 2 cans of San Marcos Refried Beans (580g) (optional)
  • Flour Tortillas

Instructions:

01. Mix the eggs with milk, salt and pepper.

02. Fry the machaca with some oil.

03. Add the Sauce to season the machaca and then pour the eggs.

04. Serve with beans and tortillas.

San Marcos tip: You can use nopal tortillas for a light version.

Ingredients:

  • 2 Pasilla Peppers
  • 3 Chopped Red Tomatoes
  • ¼ Chopped White Onion
  • 1 Garlic Clove
  • 1 can of San Marcos Refried Bayos Beans (580g)
  • ½ cup Vegetable Oil
  • 6 Sliced Corn Tortillas
Side dishes:

01. 150g Fresh Cheese in squares

02. 1 Sliced Avocado

03. 1 cup Cream

Instructions:

01. Toast the pasilla peppers and remove the stems, veins and seeds.

02. Blend just one of the pasilla peppers with the tomatoes, onion, garlic, beans and water.

03. Chop the other pasilla pepper and fry it with oil until slightly crispy.

04. In the same pot pour the beans mixture and let it season.

05. Serve the soup with the sides, including the fried pepper.

Creamy bean soup

Ingredients:

  • 1 Tbsp Canola Oil
  • 2 Garlic Cloves
  • ½ Onion
  • 1 ½ cup of San Marcos Refried Black Beans
  • ½ cup Cream
  • 2 ½ cup Chicken Broth
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 2 Epazote Leaves
  • Croutons or Baked Tortillas

Instructions:

 

01. Heat the oil and slightly brown the garlic and the onion.

02. Add the beans, cream and some chicken broth.

03. Pour that in your blender and add the rest of the broth and milk and mix.

04. Put the mixture in the same pot and add salt, pepper and epazote. Let it cook for 5 minutes.

05. Serve with croutons or baked sliced tortillas.

Bean and red sauce burritos

Ingredients:

  • 1 jar of San Marcos
  • Red Sauce
  • Flour Tortillas
  • 1 can of San Marcos Refried Beans
  • 100g Chorizo
  • 150g Grated Cheese
  • Oil

Instructions:


01.
Fry the chorizo and add beans and cheese. Then you can add sauce, but make sure the consistency remains the same.

02. Fill the tortillas with the bean mixture and roll them in a burrito shape.

03. Heat them and serve.

San Marcos Tip. You can also fry them in oil.
