San Marcos peach stuffed chicken breasts

Ingredients:

  • 1 Tbsp Butter
  • 1 Tsp Vegetable Oil
  • 3 Tbsp cut Onion
  • Salt and Pepper
  • 1 can of San Marcos Peach Halves with Syrup, drained and sliced
  • ½ cup Chopped Walnuts or Almonds
  • 2 Tbsp Finely Chopped Parsley
  • 4 Half Chicken Breasts

Instructions:

01. Heat 1 tablespoon of butter with 1 tablespoon of oil. Let the butter melt and integrate the onion until smooth. Season with salt and pepper to taste and add the San Marcos Peach Slices with the walnuts and parsley, mix and reserve.

02. Season the breasts with salt and pepper and add the filling to the center, secure with a toothpick.

03. Put the remaining butter and oil in a big pan and fry the breasts on each side until golden. Remove them from the fire and put them in a glass container.

04. Deglaze the pan by adding one cup of water, scrape with a spatula any browned bits that have stuck and season with salt and pepper. Bathe the breasts with this sauce and serve hot.

San Marcos Tip. Add a little bit of oil to the butter to prevent it from burning and your dishes will take a more pleasant color.

Pork tenderloin with chipotle and pineapple glaze

Ingredients:

  • 1.5 kg Pork Steaks
  • 1 Tbsp Black Pepper with Lemon
  • 1 can of San Marcos Chipotles (560g)
  • 1 can of San Marcos Chopped Pineapples with Syrup (560g)
  • ½ cup Vegetable or Chicken Broth

Instructions:

01. Season the steaks and place them in a glass container.

02. For the glaze: Blend the chipotles (you can start blending 2 or 3 and check the spiciness) and then add the pineapples and the syrup.

03. Marinate the steaks for one hour turning them occasionally. Remove the glaze. Seal the steaks and then cook over a medium-low heat.

04. Thicken the glaze over low heat.

05. Slice the steak and serve with the glaze.

Frozen Bellini

Ingredients:

  • 1 can of San Marcos Peach Halves with Syrup (820g)
  • 1 bottle of cold Prosecco or sparkling wine

Instructions:

01. Freeze the peach halves one day in advance.

02. Blend them with the freezing syrup until smooth, add the Prosecco and mix everything with a high spoon.

03. Cheers!

San Marcos Tips: If you want a non-alcoholic version of this drink, substitute the Prosecco for a sparkling lemon soda or grape juice.

Sweet and sour chicken taco lettuce

Ingredients:

  • 2 Pieces of Lettuce
  • 2-3 Tbsp of San Marcos Chipotle Sauce
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Sherry
  • 1 Tbsp Cornstarch mixed with 2 Tbsp Water
  • 5 Tbsp Peanut or Vegetable Oil
  • ½ tsp Salt and Ground Pepper
  • 400g Coarsely Ground Chicken Breast
  • 1 Tbsp Fresh Ginger, chopped
  • 2 Chopped Garlic Cloves
  • ½ cup of San Marcos Pineapple Slices with Syrup

Instructions:

01. Choose the most complete lettuce leaves, disinfect and refrigerate.

02. Mix the chipotle, soy sauce, sherry, cornstarch, 2 Tbsp of oil, and the salt and pepper. Add the chicken breasts and let it sit for 15 minutes.

03. Heat the other 3 Tbsp of oil in a wok with the ginger and garlic. Add the chicken breasts and cook until everything is blended, then add the pineapple.

04. Put one leaf, one Tbsp of the mixture, make a taco and enjoy.

San Marcos tip: You can add walnuts or roasted peanuts to create a new texture.

Quinoa, kale and pineapple salad

Ingredients:

 

  • ¾ cup Olive Oil
  • 4 cups Kale
  • ¾ cup Cashews
  • ½ can of San Marcos Sliced Pineapples with Syrup
  • 2 Chopped Avocados
  • 1 cup Cooked Quinoa
  • ¼ cup Balsamic Vinegar
  • Salt and Pepper
  • ¼ cup Toasted Sesame Seeds

Instructions:

01. Drizzle ¼ cup of olive oil over the kale. Remove the stems, chop and smooth with your hands. Mix the pieces of pineapple with the walnuts, avocado and quinoa.

02. Emulsify the remaining oil with the balsamic vinegar and season with salt and pepper.

03. Put the kale mixture in a salad bowl and bathe with the vinaigrette. Sprinkle the sesame seeds and serve.

San Marcos tip: Spice this up with some chipotles in your vinaigrette. You can also add some beans, lentils or cooked chickpeas.

San Marcos peach flipped cake

Ingredients:

  • 3 Tbsp Unsalted Butter (45g)
  • ¾ cup Granulated Sugar
  • 1 Tbsp Wheat Flour
  • 200g Puff Pastry

Instructions:

01. Drain the peaches and halve them.

02. Place the peaches in a container where you can bake (ab. 12 inches).

03. Melt the butter over medium heat.

04. Sprinkle the sugar and cook until caramelized. Place the peaches in a single layer.

05. Preheat the oven at 190 ºC.

06. Sprinkle a flat surface with flour and roll out the puff pastry very thinly (3 mm) making a circle slightly wider than the pan.

07. Put it on the fruit, tucking the edges into the pan. Bake until the crust is fluffy, crisp and golden, about 45 minutes.

08. To serve, put a large platter inverted on the pan, hold both and invert them.

San Marcos tip: Enjoy with cream or vanilla ice cream.

Wild fruits and pineapple compote

Ingredients:

 

  • 1 can of San Marcos Sliced Pineapples (820g)
  • 2 Tbsp Cornstarch
  • 1 Cinnamon Stick (optional)
  • ½ cup Granulated Sugar
  • 220g Strawberries chopped into quarters
  • 160g Blackberries
  • 1 cup Quesillo
  • 1 cup Pápalo
  • 1 Sliced Avocado
  • ¼ cup Sliced Onion
  • 160g Raspberries

Instructions:

01. Drain the pineapples and chop them.

02. Mix the cornstarch with the syrup.

03. Pour in a pot and add the cinnamon stick and the sugar.

04. Add the berries and let it boil until thickened.

05. Serve with pineapple chunks.

San Marcos tip: You can use this compote for a cheesecake, oats, hot cakes or waffles.

Ham tropical pizza for kids

Ingredients:

 

  • 1 can of San Marcos Peaches with Syrup (820g)
  • 1 can of San Marcos Pineapples with Syrup (800g)
  • 300g Ham in 2 Thick Slices (in cubes)
  • 1 cup Tomato Puree
  • 1 Tbsp Chopped Onion
  • 1 Chopped Garlic Clove
  • 1 pinch of Oregano
  • 4 Pizza Bases
  • 250g Grated Manchego Cheese
  • Salt and Pepper
  • Oil

Instructions:

01. Sauté the onion, garlic and tomato puree with little oil, add some oregano and season with salt and pepper.

02. Add a layer of sauce on each pizza base.

03. Add cheese, ham, peach and pineapple.

04. Bake until the cheese melts down.

San Marcos tip: You can make some fruit water with the remaining fruits.

Ingredients:

 

  • 1 can of San Marcos Peaches (820g)
  • 1 can of San Marcos Mangos (800g)
  • 2 packages of Vanilla Cookies
  • 140g Cream Cheese
  • Lemon Juice (3 lemons)
  • ½ cup Condensed Milk
  • Cups

Instructions:

01. Blend de chopped mangos with the cream, condensed milk and lemon juice.

02. Chop the cookies and put the first layer on your cup, then add the mango mixture and repeat until you fill the cup.

03. Put your cups in the fridge for 2 hours.

04. Add some peaches as decoration.

San Marcos tip: You can add some lemon peel as decoration too.

Ingredients:

  • 1 can of San Marcos Peaches with Syrup
  • 1/3 cup Oats
  • ¼ cup Amaranth
  • ¾ cup Natural or Peach Yogurt
  • 1 can of San Marcos Chopped Pineapples with Syrup
  • ¾ cup Coconut Water
  • ¾ cup Milk

Instructions:

01. Blend 4 peaches with the oats, amaranth and yogurt.

02. Add ice and blend.

03. Use the syrup to sweeten.

04. Blend 4 slices of pineapple with the coconut water and the milk.

05. Add 1 cup of ice and blend.

06. Use the syrup to sweeten.

San Marcos tip: You can add vanilla ice cream.
