Pork rind in green sauce

Ingredients:

  • 2 Tbsp Canola Oil
  • 2 cups of San Marcos Nopales
  • 1 Tomato Leaf
  • 1 tsp Salt
  • 1 can of San Marcos Green Sauce
  • ½ Onion
  • 4 cups Water
  • ½ cup Coriander
  • 300g Chop Pork Rind
  • Salt and Pepper

Instructions:

01. Heat one Tbsp of oil and add the nopales, the tomato leaf and some salt. Cook moving everything occasionally until the nopales take on a deep green color and their liquid is almost fried.

02. Put everything in a different pot and add the green sauce, let it boil for 10 minutes. Add the pork rind and cook for another 5 minutes.

Wrapped fish

Ingredients:

 

  • 1 lata de 215 grs Chiles chipotle en trocitos SAN MARCOS
  • 1 lata de 350 grs Zanahoria en Escabeche SAN MARCOS
  • 4 filetes de pescado el de su preferencia
  • 2 jitomates picados en cuadritos
  • 3 cucharadas de cebolla picada
  • 2 dientes de ajo picado fino
  • Media barra de mantequilla en cuadritos
  • Sal y pimienta a su gusto
  • 4 cuadros de papel aluminio

Instructions:

01. Mix the tomatoes, garlic, chipotles, salt and pepper.

02. On each foil, put one fillet and some sauce.

03. Add some carrots and a square of butter. Close the foil.

04. Put it in a pan at low heat and let it cook for some minutes.

05. Serve with salad.

San Marcos tip:

You can use plantain leaves instead of foil and secure everything with a hemp thread.

Vegetable tortilla

Vegetable tortilla

Ingredients:

  • 2 cans of San Marcos Carrots and Peas (225g)
  • 1 can of San Marcos Sliced Jalapeños (215g)
  • 2 Tbsp Parsley
  • 1 Cooked Potato (in squares)
  • 10 Eggs
  • Oil
  • ¼ cup Milk
  • Salt and Pepper

Instructions:

01. Whisk the eggs with milk and season.

02. Fry it in a pan with oil at low heat.

03. Add the vegetables and jalapeños.

04. With a spatula, form the tortilla and wait until fully cooked. .

05. Flip it and serve.

San Marcos tip: You can also add ham.

Corn cupcakes

Ingredients:

  • 3 cups of San Marcos Corn (225g)
  • 3 Eggs
  • 1 Melted Butter Stick
  • 6 Tbsp Flour
  • 1 Tbsp Vanilla
  • 1 cup Condensed Milk
  • 1 Tbsp Baking Powder
  • Cupcake Wrappers
  • 1/3 cup Sugar (optional)

Instructions:

01. Drain and blend the corn with the eggs, ¾ of the butter, flour, vanilla, condensed milk, baking powder and sugar.

02. Spread the molds with the remaining butter (if you have wrappers, skip this step).

03. Pour the mixture in the wrappers and bake for 35-45 minutes at 180 ºC or until fully cooked.

San Marcos tip: Sprinkle some sugar icing.
