Saint bean cream with chipotle

Ingredients:

 

  • 8 cups of cooked bayos beans
  • ½ chopped onion
  • 4 chopped garlic cloves
  • 290 g of San Marcos Chipotles
  • 2 epazote branches
  • 2 cups of cream
  • 1 liter of chicken broth
  • 2 Tablespoons oil
  • 1 chopped avocado
  • 4 cups of corn tortilla cut in slices
  • 4 Tablespoons chopped parsley
  • 300 g of chopped cheese
  • Salt and pepper to taste

Instructions:

01. Cool your onion and garlic, add the beans and let it sit for 10 minutes, then add the Chipotles, epazote and pepper, let that boil.

02. Let that cool for a few minutes and blend it with cream, put it back to the heat and pour the chicken broth in.

03. Cook until lightly thick and finally serve with the tortillas, avocado and cheese.

Glorious potato pancakes with tuna and chipotle

Ingredients:

 

  • 290 gr of San Marcos Chipotles
  • 2 cans of tuna
  • 2 eggs
  • 2 tablespoons butter
  • Ground black pepper and salt to taste
  • 2 potatoes
  • 100 gr of ground bread

Instructions:

01. Peel the potatoes and cut them into squares. Cook them in salted water and let them drain once they are soft.

02. Put them in a bowl, add butter, a pinch of pepper, the eggs, ground bread, Tuna and San Marcos Chipotles

03. Mix everything together into a dough and make small pancakes.

  • 400 g of bacon cut into cubes

  • 1 kg of beef fillet cut into cubes
  • Salt to taste

Instructions:

  • 290 gr of San Marcos Rajas
  • 1 kg of ground beef
  • 12 chopped tomatoes
  • 4 chopped garlic cloves
  • 1 finely chopped onion
  • 8 cooked carrots in small cubes
  • 4 cooked potatoes in small cubes
  • 2 cups of cooked peas
  • 4 tablespoons oil
  • Salt and pepper to taste

Instructions:

01. Blend the tomatoes with the garlic, add water if needed.

02. Heat the oil in a saucepan and add the onion and the rest of the garlic.

03. Add the meat and move to make small lumps. Let it brown.

04. Pour the tomato puree and mix. Splash and cook for 5 minutes over medium heat.

  • ½ liter of water
  • 1 pinch of sugar

Instructions:

01. Wash and disinfect all your vegetables. Chop the tomatillos to make the sauce.

02. Roast the tomatillos with oil and put them in the blender. Roast the onion and the garlic cloves, then add the rajas and blend everything together with the coriander, seasoning, salt, sugar and a glass of water.

Chipotle pasta and sausages fallen from the sky

Ingredients:

 

  • 290 gr of San Marcos Chipotles
  • 10 sausages
  • 6 tomatoes
  • 1/8 onion
  • 2 garlic cloves
  • Salt to taste
  • 200 gr of your favorite pasta
  • ¼ sour cream

Instructions:

01. Cook your pasta in 1 liter of water for 15 minutes and drain it.

02. Grill your tomatoes.

03. Cut the sausages into strips and fry them in a pan.
