Pork tinga with chipotle

This recipe is a collaboration with our friends from Kiwilimón.



  • 4 cups Pork
  • Water
  • ¼ Onion
  • 1 Garlic Clove
  • 2 Bay Leaves
  • 2 cups Tomato
  • 1 Tbsp Lard
  • 1 cup Sliced Onion
  • Salt and Pepper


  • ¼ Onion
  • 2 Garlic Cloves
  • 1 cup of San Marcos Chipotles
  • 1 cup Pork Broth

Serve with :

  • Tostadas
  • Refried Beans
  • Cream
  • Fresh Cheese
  • San Marcos Chipotles.


01. Cook the meat in water, this should cover 4 fingers above the meat. Add the onion, garlic, bay leaves and salt, cook for 1 hour.

02. Shred the meat.

03. Blend the tomato with onion, garlic, chipotles and 1 cup of the broth.

04. Fry the onion and the shredded meat with the lard for 5 minutes, add the sauce and season with salt and pepper, then let it cook for another 15 minutes until the sauce is reduced.

05. Serve with some tostadas with beans, cream, cheese and chipotles.
