Chicken kebab with chimichurri and chipotle



  • 1 small bunch of Finely Chopped Parsley
  • 2 Tbsp Finely Chopped Oregano
  • 2-4 Chopped Garlic Cloves
  • ½ cup Chopped Cambray Onions (with the green part)
  • 2-3 Tbsp of San Marcos Chipotle Sauce
  • 2 Tbsp Red Wine Vinegar
  • 1 Tbsp Lemon Juice
  • ½ cup Olive Oil
  • Salt and Pepper
  • 1 Chicken Breast (in squares)
  • 2 Green Peppers (in squares)
  • 1 Red Onion (in squares)
  • ¼ cup Toasted Sesame Seeds
  • 4 branches of Thyme to decorate


01. Mix all the ingredients with the chipotles.

02. Add the chicken breasts, onion and pepper to marinate. Put it in the fridge for 1 hour.

03. Start making the kebab. Add one piece of breast, one piece of pepper and one of onion. Oil your grill and cook the kebab until the breasts are cooked and caramelized.

04. Sprinkle some sesame seeds to give them a crunchy touch and decorate with thyme branches.

San Marcos tip: You can vary the protein by adding shrimp, beef, bacon, etc. as well as the vegetables by adding aubergine, asparagus or tomatoes.
